With more than 250 years old, this mill is one of the few that preserves its machinery intact in which much of the rice production of the time was produced, which allows us to see it working and then follow 'la Ruta de l'Aigua' to the marsh and the sea.

Built in 1741, the "Molí Nuevo", "Doblons" or "Molí de Diego" (surname of the last millers). Restored in 2001, it adopted the name of "Molí Nou" and currently conserves the original structure and machinery of the two wooden mills - one for wheat and the other for rice - which were in operation until the 1960s.

The distribution of the building follows the Valencian Gothic style with a central courtyard around which the whole building is organized. We also find today the rooms corresponding to what was once the stable, the cellar, the stable for domestic animals and the laundry, among others.

Currently, the mill houses the Water Museum and is one of the obligatory stops on the Water Route. It also hosts monthly exhibitions and a permanent ethnological exhibition with old tools and utensils of the countryside.

The Molí Nou is a point of connection with the agricultural past of Quartell and a place that allows us to learn about and delve into our history.

The building has a space reserved for the entrance of carts, now converted into a courtyard. Nor does it lack the rest of the traditional rooms of the 18th century mills with their stables, cellar, wells or cisterns and laundry area. The mechanism of the Molí Nou is diversified in two areas: the one reserved for the milling of the cereal and the one for the whitening of the rice. The cleaning and preparation system of the latter has a wooden framework, pulleys and highly complex sieving mechanisms that are preserved in perfect working order in this heritage jewel.

The achievement of flour required the activation of the millstone forged by the kinetic force of water; the cereal contained in the hopper was subjected to milling according to the requirements of the neighbor. But the best thing is that, each of the essential pieces of the water route and on the millstones, as well as the mechanism of transport of the grain and the flour, can be observed completely in this Molí converted today in ethnological museum.
